There are two types of ranges that are acceptable for use in a commercial kitchen and those are a restaurant grade range or heavy-duty stove. Using a heavy-duty residential range in a restaurant kitchen may seem like an economical option initially, but when it becomes apparent that the range, that is designed to only be turned on for one to two hours a day is not able to function properly when turned on nearly all day, it will be much more costly to have to replace the unit. Invest in a range that is suited to the cooking environment of a commercial kitchen right off and you will be rewarded with reliable heat and cooking for many years.
When is it time to switch to a heavy-duty range from a restaurant range? The answer given by many manufacturers is that heavy-duty stoves should be used for high volume establishments. This can be somewhat perplexing since all commercial kitchens are higher volume than a kitchen in a home, even if the family is large. High volume kitchens can be defined as kitchens that are for large institutions, such as schools, banquet halls or even prison facilities. These kitchens prepare large amounts of food at a time and have a need for an incredibly durable range.
