There are three choices when it comes to selecting a pressure steamer. There are gas steamers, electric steamers and direct steam steamers. Vulcan-Hart offers several series in the pressure steamer category: The VHL and VHLDS collections. When looking for high production steamers in either gas or electric, the VHL series comes through with a stainless steel exterior and automatic, 60 minute timer controls for each compartment. The door also has a removable aluminum alloy liner and full gasket seal around the entire perimeter.
Direct steam is different than gas or electric in that it can use either or, but the steam is piped directly in to the cavity. This is an extremely inexpensive way to cook if your building supports direct steam. Direct steam is provided by the building and must be certified as acceptable for cooking before it ca n be used in a direct steam pressure steamer. Be very certain to check with the property owner and the county health inspector before you dive right into a direct steamer purchase. If your water is not certified as safe for human consumption without filtering and you ignore the warnings, using the steamer will immediately void the warranty.
