Even the best-laid plans have been known to fail, and this is especially true when considering pizza dough. During the baking process, air pockets can form on the pizza’s surface, creating an unsightly finished product. In order to prevent such disturbances, Update International offers its roller docker (RD-5). This dough docker features 3/8” stainless steel pins that pierce the dough in order to prevent air bubbles from forming while the pizza is being baked. It has a 5”-wide plastic roller and a stainless steel handle.
