This JK-05 sashimi knife has a high-carbon stainless steel blade. The POM plastic handle is resists corrosion from food acids or dishwashing chemicals. Traditionally used to slice fish, meat and vegetables into thin portions. It is also known as a "sushi" knife as it is used to prepare the raw fish needed to create most kinds of sushi.
