Q: How long will the food remain at 40°F if the lid is open?
A: This 28" Mega Top Sandwich/Salad Prep Table (TST-28SD-12) is designed to keep foods below 40° all day, even if the lid is left open. However, these results are best when the ambient air temperature is at room temperature and if the table is not exposed to any direct light or heat.
