Any restaurant or other foodservice operation that makes sandwiches, salads or pizzas to order will benefit by having a True prep table. These tables all have ingredient rails on the top along with a cutting board to give a preparation surface. The table base has a refrigerated cabinet where extra ingredients can be stored.

When selecting a True prep table, the food you are preparing plays a crucial role in the decision making process. Establishments that will be preparing pizza or need a little extra preparation room will want a table that has a raised ingredient rail and wider board.

Sandwich and salad shops that experience moderate to low traffic should be alright with a True prep table that has a standard ingredient rail that only holds two rows of pans. Larger volume establishments or those that have a lot of different ingredients will want a mega top unit that has a third row of pans. However, this extra row of pans means that the plastic board will be a little narrower.
