All the work that goes into a perfectly prepared pizza may go for naught if pockets of air remain in the dough, which will cause unsightly bubbles to form on the pizza’s surface during baking. To prevent these bubbles from occurring, Royal Industries recommends its 5” dough docker (ROY DD 127). This roller dough docker features a five-inch wide nylon cylinder with stainless steel pins that will pop any potential air pockets before they rise and mar the surface of the pizza as it bakes.

Like the pastry cutter I bought for my brother, this is bigger than it looks and very well made. It is light but not flimsey and has just enough weight to feel solid but not heavy. I'm impressed and would look here again for products.
This is the first docker I've ever owned, and I'm really pleased with it. It makes the dough significantly better by reducing all the air pockets inside. Well worth it's more than reasonable price in my opinion.
Heavy stainless steel, good construction. This was the most reasonably priced comercial grade dough roller i found on the internet.
