When you shop for a mixing paddle, be sure to have the measurements of your soup kettle or stock pot on hand. The mixing paddle should extend several inches above the rim of your kettle or pot in order for your kitchen staff to use it comfortably.

If you let food sit still in a soup kettle, steam kettle or large stock pot for a long period of time, the bottom of the kettle will become overcooked and dry. Using a mixing paddle and stirring your concoction every few minutes will ensure that your soup or beans stay consistently cooked and moist.
