Standard ladles are the most common type of ladle, and they can be used for just about anything, from serving soups and punches to adding a baste to a pan. One-piece ladles are higher-end than the more economical two-piece models. With a one-piece ladle, the entire ladle is constructed from a single piece of metal. A two-piece ladle usually has the bowl and handle of the ladle separately constructed, then welded or bolted together. Unfortunately, with a two-piece ladle food can get stuck in the rivets, or the welded piece can break off.
Flat-bottom ladles are great for dishing up a standard amount of something. For example, many pizza parlors use a flat bottom ladle to dip and pour their sauce onto the pizza. The flat bottom allows the chef to spread the sauce with the ladle itself by moving it gently over the surface of the crust. These ladles can also be used to spread chocolate, glazes or other pastes or liquids over pastries, breads or other food items.
