Solid Pizza Pans

Aluminum is the preferred metal for solid pizza pans because it is both light weight and durable. Aluminum also does an excellent job of transferring heat to the cooking food. Steel is another metal used, though not as common. Steel pans are more durable than aluminum, but must be seasoned every now and then with cooking oil to prevent rust or stains.

Most pizzerias offer several different sizes of pies, from the small personal pan (ten inches or smaller) up to the extra large 18 to 24 inch pizzas. Whatever sizes you need, it is suggested that you acquire them from the same brand, so you have a uniform collection of pans and know that they will perform identically.
