There are various types of pans available for both baking and serving the pizza. Shops that use a conveyor or standard oven may want to use a screen to bake the pies because it will increase heat transfer. Finally, most pizzerias use a peel to put pizzas into and take them out of the oven, this helps prevent burns associated with reaching into a hot oven.
