Health inspectors love looking under tables and counter spaces for stray bits of food that was not swept up. Rather than having to reach under the table with a broom, you can simply sweep everything off the edge into a trash can.
You may also want to consider a table with an undershelf. Storage space is valuable space in a pizza shop, so make the most of the available space under the table.
