Dough scrapers are used to perform many different tasks in the commercial kitchen. For the pizza parlor owner, they are used to slice dough balls into smaller portions, scrape spilled toppings off of the preparation surface or score the tops of Stromboli’s and calzones.You will want to consider the overall size as well as the handle material when selecting a dough scraper. The length (or width) of the scraper is one of the most important specifications to look at because it indicates the overall size of the blade. As with knives, this blade size will indicate if the scraper will be sufficient to perform the intended cutting, cleaning and scraping tasks.
The majority of the scraper blades are made of stainless steel. This makes them easy to clean and practically stain and rust resistant. The handles, however, can be metal, plastic or wood. The handle material is usually just a matter of preference.
