Heat Sink Speed Bake

A main concern when baking deep dish pizza is making sure it is cooked evenly throughout. Oftentimes pizza shops will partially bake the crust and cook some of the ingredients ahead of time. An alternative method is to use a heat sink speed bake. A heat sink speed bake is constructed entirely of cast aluminum and has several short pins that hold it up and sit in the pizza. The speed bake is set into the center of deep dish pizza. The oven heats up the aluminum which transfers that heat directly to the center of the pizza, so the interior and crust are cooked evenly; it can also be used on stuffed pizzas. The heat sink has a nonstick coating, so it can be easily removed from the pizza.
