Flattening dough with an automatic dough roller is a simple process. First you have to set the machine to the appropriate final thickness. Then you portion the dough and shape it into a ball and lightly flour the ball, machine hopper and receiving table.
Place the dough into the hopper which will partially flatten and give it an oblong shape. For the second pass, you will want to turn the dough 90°, so it is fed through the bottom roller lengthwise. This pass will flatten the dough the rest of the way and make a perfectly round crust.
