Crushed red pepper is a common condiment used to spice up a pizza. They are made from dried chile peppers. There are many different varieties of chile peppers, and no particular variety is the primary choice. Rather, a combination of chiles are dried, crushed and placed in the shakers, seeds and all. The crushed red pepper shakers themselves are a pretty simple affair. The plastic or glass containers are smooth, ribbed or have the grooved-swirl pattern that we all remember from childhood and eating pizza with our parents. The polished chrome tops have slits or holes that are sized to allow the flakes to come out with just a little bit of shaking.
The majority of the crushed red pepper shakers have glass bodies. This will create a more elegant table setting. However, despite the fact that the glass is thick and can withstand a beating, chances are you will break a few, so you will want to have spares. Pizzerias that experience high traffic and expect the shakers to be overly abused should consider the plastic models, which are more durable than glass.
