The 6" Skinning Knife (5519-6) is commonly used to separate skin from muscle and reduces the chances of damaging the underlying muscle mass. This knife has a 6-inch curved blade that is rounded at the tip. The steel used in the manufacture of the blade is high-carbon and does not stain. A well balanced handle is molded to the blade and this is made from black polypropylene which has been treated to ensure that no unpleasant microbes adhere to the surface. The skinning knife is fully approved by the NSF and would be a great addition to complete the professional well equipped kitchen.
