I like the pan. I wrote a positive review but only gave it 4 stars because of slow delivery. I didn't swear in the review but the review was denied. I stand by my evaluation. Great pan! Poor delivery. Is this review ok?
why do items made abroad have instructions ( ie how to season pan initially)that make no sense surely they can get an native english speaker to write the instructions for them I am glad I had the Cooks magazine instructions
I bought this carbon steel pan based on a review in Cook's Illustrated. I wanted an additional non-stick frying pan which was not teflon-coated, which could take high temperature pre-heating -- like a wok and not tend to stick like my cast-iron skillet.. The manufacturer's instructions for seasoning are very confusing, though Cook's had a more detailed procedure. Frying potato skins in oil on my Bosch cooktop did not do the trick, so I resorted to my gas grill and really cranked up the heat. The outside of the pan turned a nice brinze (see photo), but the inside has yet to acquire an even patina with consistent non-stick properties (see photos). It is still a work in progress, but using the salt+oil cleaning process recommended for woks along with more usage, it will eventually form the desired surface. Did try two eggs with a little bit of oil and they did slide around like hockey pucks.
I bought this almost a month ago, and I have come back to buy one for each of my children. Great pan, truly non stick! Great weight and balance.
