Wood cutting boards take a little more TLC to maintain than their plastic cutting boards, but with the right care, the wood will stand the test of time. To begin, always coat the board in mineral oil when it is first purchased. The oils act as a sealant to prevent bacteria from getting too embedded in the wood. When washing your board, never let it soak in water, this will cause the wood to warp. Wash the board with a sponge and warm, soapy water. As the penultimate step, towel dry the board and finally place it in a rack to dry upright.
It is important to remember never to use bleach on the cutting board as it will have an adverse reaction to the chemical. If there are bad odors, such as garlic or onion, emanating from the cutting board, wash the board with vinegar and water solution. This will neutralize the smells. Even when the board is not in use, remember to brush it off so that layers of dust do not build up over time.
