The slicers found in a commercial kitchen can be pretty specialized, so it is important that you get the right tool for the job. If you need to slice up some mushrooms for sautéing or adding to a salad or sauce, try using a mushroom slicer instead of a knife. Simply put one mushroom in the bowl and press down on the lever. The wire cutting strings will slice through the mushroom and create even slices. For something even more specialized, try a truffle slicer to product extremely thin slices of this delicacy.
One of the most problematic veggies to slice in the kitchen is the avocado. Ti is slippery and hard to get the giant seed out and the remaining meat is difficult to slice through without making a mess removing it from the peel. An avocado slicer slides into the avocado while it is still in the peel and effectively scoops the meat out while slicing it up at the same time. Similarly, a pickle slicer will slice one pickle up into many thin slices for stacking on a sandwich.
