Of course, everyone has made quick work of cutting up tomatoes, carrots, broccoli and even beets but no one enjoys cutting up onions. The result is that there is not a dry eye in the back of the house. The reason onions make us cry is not because of the smell, but of a gas that is released once the skin of an onion is breached. The result of dealing with the gas is that it causes our eyes to blink rapidly, making them well up with tears trying to blink away the caustic chemical. One way to lesson the sting of a chopped onion is to chop once and quickly put it in a bowl of water. The water will wash away most of the oil that causes the gas to form, making the onion less potent once it is removed for the water after a bit.
