Vacuum packing produce and meats is a great way to say money and keep your products tasting just as fresh as the day you purchased them. A vacuum packer works by sucking all of the air out of a bag and then automatically sealing the bag without letting any air get back into the bag. The process of removing the air ensures that no additional moisture is locked in the back with the food. The additional moisture is what causes those nasty little ice crystals to form all over the food and creates freeze burn eventually. Produce, beef or poultry that has developed freezer burn is not at all acceptable for serving.
Another use for a vacuum packing machine can actually be for preserving marinated or prepared dishes for resale or dispersal. A vacuum machine can be a godsend for food kitchen and meals on wheels programs that deliver premade meals to the less fortunate. Prepare the meal, seal it on a place with a vacuum packing machine and the meal will keep for much longer and be less messy to transport. Or, for a butcher shop, place tender cuts of steak or pork in a bag with marinade and seal the whole thing up. Sell the packages to customers looking for a great marinated piece of meat but without the hassle of marinating it themselves.
