Utility carts are the Swiss army knife of kitchen transport. They can be used to take ingredients in to the restaurant from a delivery truck and taken to the appropriate storage area. They can be used to carry all of the bulk ingredients for a recipe to the food preparation area of the commercial kitchen, thus saving tons of time and energy. They can be used as bus carts on the front end of the restaurant; they just need to be loaded up with bus tubs beforehand.
