Select one of our perforated or slotted turners if you will be making items that produce excess juices or water while cooking. A perforated or slotted turner will allow juices to drain before being served to the customer. This is useful when cooking burgers that customers have specified cooked medium well to well done. When the juices are removed from the meat, the core of the meat is able to cook more thoroughly, resulting in a burger cooked to specifications and one happy customer. Removing the juices will also flatten the food you are cooking, so to keep the meat looking plump, start out with a fairly fat burger.
For a very specialized tool, use a fish turner to handle your delicate fish products that are being grilled. This is not a tool for every restaurant, but it would be a wise investment for any fish house or seafood restaurant. The turner is designed to get at the fish at the appropriate angle so as not to disturb it too much so that it falls apart upon flipping. Even when using the fish turner it is crucial to take the process slowly and steadily. It is not like flipping a burger. Fish is a delicate meat that can fall apart fairly easily.
