Strainers are a must-have in any commercial kitchen to keep food properly washed and clean. They will help you meet health codes in your area and keep your customers healthy, which is, of course, the most important thing. Investing in several good strainers so that multiple ones can be used at once is a worthwhile investment. Strainers appear to look much like a colander, with the exception of their handles. Strainers have one long handle so that it is held under running water as the user moves the pot around under the water to use the water as a force for pushing the debris out of the strainer and into the sink. The produce should be tossed and moved about quite frequently while it is being washed to loosen up any dirt that could be hiding in between leaves.
Once the water has been turned off and the produce cleaned, it is best to continue to shake the strainer over the sink to let any excess water run off the fruits or vegetables and into the sink rather than a counter top of floor where it can become a hazard in other areas of the kitchen.
