Double boilers are a set of two nesting pans that are designed to be used together to cook delicate foods such as eggs or chocolate. The bottom pan holds water and the top pan that inserts into the bottom pan holds the food. The warm water bath slowly cooks the delicate ingredients inside. Double boilers are designed to cook foods that cannot be directly cooked over heat or cannot be cooked in water. These foods include chocolate, eggs and sugar. The nesting pots form a warm water bath that slowly heats up, causing the interior pan to heat up very slowly and gently. Because the foods cannot be allowed to actually touch the water it is incredibly important never to put the lid on double boilers when cooking in it. The condensation that will form on the interior will drop into the pan, diluting the food that is being cooked.
