Spatulas come in many different shapes and sizes but one of the bigger decisions to make when choosing what type of spatula to keep in your commercial kitchen is whether you want metal or plastic. Each material type has their pros and cons but if you are able to decide which features are right for your kitchen, then choosing between the two material types should not be a big problem.
Plastic spatulas are preferable for their treatment of cookware. The soft blade of a plastic spatula will not tear up the non-stick coat of a Teflon pan, nor will it cut though a properly seasoned cast iron griddle. Plastic is completely dishwasher safe, however, the material does tend to take on stains and smells more easily than metal spatulas do. Metal spatulas can do pretty bad damage to metal pots and pans, but they are a very durable, long lasting alternative to the more economical, less sturdy plastic versions.
