Sizzler platters and underliners are typically sold separately from each other so that the wood types and finishes can be mixed and matched. This may work within a brand, but it typically will not work between the different brands because of size and style differences. Many brands do sell thick fabric holders to go over the sizzler holder so that it can be easily carried without the need for additional mitts or clothes. The holder can be left on the handle so customers can handle the platter as well.
The platters most commonly used are cast iron, since this metal conducts and holds heat longer than most of the metals available. The thickness of the iron helps keep the platter warm for a longer period of time to ensure the table that received the sizzler will have warm meat for more than just a few minutes. Cast iron is also remarkably easy to take care of by simply washing any debris off the platter, cleaning it with a warm, soapy dish rag. To kill any germs it may have picked up over the course of the meal, set the wet platter on an open burner and allow the heat to evaporate the water.
