Scoops can be used in many areas of the commercial kitchen from ingredient bins to ice buckets.
If you will be using your scoop for ice, remember that only plastic scoops are NSF approved for ice handling, so you must purchase plastic for use with ice. For scooping out dry ingredients from a bin or tote, you can use either metal or plastic scoops. Just remember not to leave the scoop out on the counter or work space and then place it back in the bin. This will cause unwanted cross contamination. When not using a scoop, place it in the bin or in a holster.
If you think your restaurant does need more than one scoop, think again. Scoops are lifesavers in the bar industry when filling and carrying ice totes from the back of the house to the back bar. They make the process much quicker and safer than using a glass. Scoops can work wonders in the kitchen where the need for scooping large amounts of ingredients from one bin to the prep area can be much faster than wheeling around a large bin.
