Unlike metal shelves, these plastic shelves are often vented, or constructed with thin slots or spaces between plastic rails, rather than a smooth, solid surface. These vents are actually ideal for increasing air-flow around and between food products, making these units ideal for walk-in coolers and dry storage alike. Although this may appear to be more difficult to clean, the shelves are actually removable to that they can be easily cleaned and sanitized in the commercial dishwasher.
