When you are making more than one pie at a time, sometimes counter space can become a rare commodity. Pie stands are a great way to cool your pans in a tiered manner, creating much more space on your counter. There are plain, utilitarian pie stands that are best suited for back of the house and there are decorative, tiered stands that will let the pie cool and merchandise it. Setting a pie out to cool is always enticing, but it shouldn’t be allowed to sit out for too long. Pies do have a shelf like and no one wants a stale slice of pie. Different ingredients mean different lengths of time a pie can be displayed, but in general, three days is the limit of time a pie will remain at its peak flavor. Once it has sat out past that time, ingredients can start to go bad and the once flaky and tender crust becomes soggy and weighted with the moist ingredients inside. To be very certain you only serve the freshest pies, only display the pie for two days and then donate it to a food bank or homeless shelter while it is still edible.
