When creating fresh burgers, it is critical that the meat being used is oof the highest quality to ensure customer safety. When you receive a shipment of beef, check the interior temperature of the meat to make sure they have been transported in the correct temperatures. Beef should be transported and stored at 40°F. Once the beef passse inspection, make sure it is taken to a refrigerator (or freezer if it is being store for use more that two days in the future) immediately.
It is important to know what to look for when checking meat to ensure that it is good quality. When you receive your beef, it should be cherry red in color. Reject an meat that has brown, black or green discolorations. Also, never accept meat that has the wrapper torn, damaged or even dirtied. This could be an indication that there is damage to the meat inside.
