These forks come with polycarbonate, metal or wooden handles. Some of the decision on handle type is purely aesthetics, but there are benefits and drawbacks to each material. A metal handle is the most durable of the three materials and give the knife a sleek look. It will conduct the heat, though, so a mitt should be used for protection against burning. Plastic handles are more economical and will not conduct the heat. They are much more dishwasher friendly as well, but they can crack and break easily. Wood handles are the classic choice of many chefs. The handles are sturdy and durable, but they are difficult to maintain as any dishwashing will warp the wood and they must be hand washed.
