Icing Spatulas

All great cakes start with a perfectly smooth layer of frosting. The icing on a cake is the canvas that chefs use to create their works of edible art. The key to a perfectly flat and evenly frosted cake lies in a good icing spatula, also known as a bakery or pastry spatula. To create enviable edges and sleek lines on your cake’s frosting, an icing spatula is a must have. Begin by covering the sides of the cake with frosting. It doesn’t have to be neat at this point; you are just trying to get frosting spread around the cake. Make sure the blade never directly touches the cake, lest you get crumbs mixed in with your frosting. Once a good base layer has been established, hold the spatula gently up to the edge of the frosting a spin it on a rotating stand. This will get rid of excess frosting and spread it where it is needed. 

Once the side is done, cover the top with icing and then place your spatula horizontal and gently touching the frosting and pull it towards you. To remove the edges, turn the blade around the sides again and then the top. Continue alternating until extra frosting has been removed. Investing in a good assortment of icing spatulas, with both angled and straight blades, will help you create a perfectly smooth surface for your cake or other pastry.
