Dutch ovens have been around for centuries and were originally buried underground with hot rocks to facilitate the cooking. These days, though many folks still like to bury their Dutch oven while camping, the majority of people use Dutch ovens on the range. While cast iron is probably one of the most durable pieces in a commercial kitchen, there are a few no-no’s
that should be followed in the care and maintenance of your cast iron Dutch oven. Never let a cast iron pot sit in water for long periods of time. The water will permeate the coating no matter how well it is seasoned. Do not use soap on a dutch oven, it will not wash all the way off and will make your next dish taste like soap. Always heat a cast iron slowly. If you rush the heating process, you will burn the food inside and be left with a very difficult to clean pan. Do not ever put cold water in a hot cast iron pan. The dramatic change in temperature will crack the pan on the spot. After cleaning, never leave the lid sealed on the pot. The oil inside will turn rancid. Place a small sheet of paper folded a few times in between the pot and the lid. This will let any moisture escape.
