Copper Stew Pots

There can be a lot of waste in a commercial kitchen and making a stew is a great way to use those ingredients that make still be good for only a few more days and make a great dish with it. Use some leftover beef or poultry bones from preparing other dishes and prepare a great bases stock, cut up some beef (most beef become very tender after stewing for a long time, so you can use cheaper cuts) and toss them into the water along with some vegetables, fresh spice and herbs and let the stew sit.

Copper is a great material to use when making a stew because of the way it distributes heat evenly throughout the entire pan. When using a copper stew pan, you can be sure that the top, edges and bottom are all being cooked evenly while sitting on the stove. Be careful though, that heat also distributes evenly to the handles as well, so use caution and a mitt when picking up or moving a stew pot.
