Frying pans are a must have for any commercial kitchen because it can be used for so many tasks. They can be used to whip up perfect pancakes, delectable omelets or to stir fry healthy vegetables in light oil. Whatever the task, frying pans can usually lend a helping hand. Copper is an excellent choice for a frying pan since it conducts heat so evenly much like wire copper conducts electricity extremely well. Not only will the bottom of the frying pan heat evenly, but so will the sides, ensuring that the food will all be touching the pan at the same temperature, therefore cooking evenly no matter where the ingredients are on the pan. If you get a copper pan with w copper handle, watch out, the heat conducts all over the pan, including the handle, so use a mitt or towel when using the pan. To clean copper dishes, run it under hot water and wash it out with a soapy rag. This should take care of most of the food that has been left in the pot. It is important to remember never to run the fry pan through the dishwasher as the chemicals in the detergent are far too abrasive for the copper and it will cause the copper to tarnish prematurely or even pit or stain.
