Caring for a composite cart can be fairly simple depending upon how the manufacturer has created the polymer unit. Of course, it is imperative that the carts are thoroughly washed every night to ensure that they remain bacteria free, but some carts will require a little more cleaning than others. When looking at the carts, check to see if the manufacturer treats the composite material with anti-microbial chemicals.
If the manufacturer has treated the material with anti-microbial chemicals, then cleaning after each shift does not need to be as thorough, though all food pieces and stuck on food needs to be washed off. The other nice thing about anti-microbial carts are that they are usually NSF approved, making the safe to use when transporting clean dishes. Plain composite carts are a more economical option, but the trade off is a more complete cleaning each day. Not only do all the tiers need to be washed completely with water, after they are dried, it is best to scrubs them down with an all-purpose cleaner to kill all of the bacteria that have been forming over the course of the day.
