Espresso is made by forcing hot water through finely ground and tightly packed coffee pellets. The result of this pressure brewing is about two ounces worth of concentrated coffee that has a layer of caramel colored cream. To make espresso, you need a special machine capable of precise brewing required to pull a shot of espresso. Espresso machines feature groupings that force the hot water over the grounds. The water has to be at the right temperature, just below boiling point. To make espresso, the barista grinds a small amount of beans (about one tablespoon’s worth) into a mesh basket, called a portafilter. After packing the grounds, the portafilter is placed under the water pump on the machine. The hot water is then forced through the grounds using either a mechanical or automatic pump. The hot water strips the flavors and essential oils from the grounds and into the liquid shot. The brewing process should take around 30 seconds.
