One knife that is indispensable and found in nearly any commercial kitchen is the chef’s knife. Also referred to as a cook’s knife these kitchen workhorses can be used to perform pretty much any type of cutting or slicing task. Chef’s knives usually have six to twelve inch long blades, and the blade shape illustrates the knife’s versatility. The blade widens the closer you get to the handle. The wide portion offers more leverage and is ideal for cutting or chopping through large pieces of meat or tough food items. The center section is used most often to cut and slice a variety of foods. The blade continues to taper forming and curve upwards slightly to the pointed tip. The tip of the knife is used to create garnishes or slice small, soft foods like mushrooms and garlic.
