After a diner has paid their tab, it is a good idea to indicate this in some form while still keeping the bill for accounting purposes. The best way to accomplish this is by using a check spindle. The bill is impaled on the spindle after is paid. This keeps all of the bills in the same place and it also creates a distinctive hole in the middle of the ticket, letting the closing manager know that this bill was paid.

Depending on format of the restaurant, the spindle can be kept in the back of the house or it can be kept at a cash register at the front of the restaurant. Many fast casual restaurants have all bills paid at the cash register rather than at the table, so there is typically a cashier to process the bill. If you notice, they immediately put the paid bill on the spindle right next to the cash register to keep things organized. However, be careful when keeping the spindle at the front of the house as it is a very sharp item and it does resemble a sword. Many times little boys cannot resist playing with spindles if they are within reach. This poses a risk to both the child and your business. Keep the spindle out of reach of children.

If you choose to keep the spindle in the back of the house, place it in an area that is easily accessible to all employees so they impale checks quickly and move on tot eh next order. Another way to use a spindle is to have all employees keep track of their own bills throughout the day and then, during the shift end or restaurant closing, when the manager is tallying up the bills, they can mark the bills tabulated by sticking them on the spindle. This will make sure that every bill is accounted for.
