Brioche breads are typically made in a fluted tin pan with a rounded piece of dough placed on top. The bread has a high egg and butter content which gives it a rich, sweet flavor. This is an excellent bread to serve during the breakfast or brunch hours of your restaurant. While traditionally thought of as a sort of sweet bread, brioche can be manipulated to be either sweet or savory based on the recipe. For a twist on tradition, try baking a sweet brioche with a fruit or chocolate filling. Likewise, you can make savory bread by filling the brioche with meat or vegetables. Due to the amount of butter used to make this sweet bread, it is imperative that the dough stays cool at all times. Since it rises in the refrigerator, many chefs will begin working on the dough and then once they’ve kneaded it for a bit, they will place it back in the refrigerator so that the butter doesn’t melt too much.
