Frying pans are a necessity in any commercial kitchen. These multitasking pans do a lot of work and take a lot of abuse because of it. There are many choices for finishes when deciding what type of pan to purchase, but the most common selection is typically of a pan with a non-stick coating for ease of care. Aluminum non-stick pans are a popular choice for frying pans because they are extremely easy to maintain and fast to clean. Pans with a non-stick coating generally have a grayish looking finish and have a waxy feel to them. These pans are ideal for dishes that require little oil or butter. They are also good for foods that require a lot of flipping or movement with a spatula such as pancakes or omelets. They should not be used for browning meats because it will not give the meat the flavor that it gets from non-stick pans. Never use metal utensils like forks or knives on your non-stick pan as this will immediately damage the finish. To clean a non-stick pan, wash it with a cloth in warm water with a little bit of dish soap. Avoid abrasive cleaners that will scratch the finish right off. Use a plastic scraper if you must rub debris off or leave the pan to soak in water for a bit and try to remove it with the cloth afterwards.
