When washing produce, it is extremely important to always wash using cold water for several reasons, the first being that tossing hot water in with fresh veggies will cause the normally crisp and fresh greens to visibly wilt due to the heat. It has the same effect as leaving them out on the counter in the hot kitchen all day. The food is much less appealing and it actually looses some of its nutritional value.

The other reason to make sure that water is appropriately cold is to protect the food from contaminant in the tap water. The tap water itself is safe for consumption, but the plumbing may be old and have rust or debris stuck to the inside. Hot water warms the pipes and causes these contaminants to loosen from the pipes and possibly flow right on to the food you are about to serve customers.
