"This iron is a 180 degree turn over type that is perfect for liquid batters. The waffle crisp up nicely while satyiong soft in the middle, just like you want. Cook time for us is about three minutes using a buttermilk batter. We also have a 90 degree waffle iron that is good but not as good as this 180 degree. If you're doing a yeast batter 90 degree is for you, but liquid batters need to 180 degree turn over for best results."
