I was looking for something between a wok and a cast-iron skillet, and this seemed ideal. Higher sides than a frying pan, helper handle, smooth finish that would season, and so on.

Unfortunately, the handle is too long to be totally comfortable on a home stove (probably would be ok in a restaurant situation), and the steel is a bit thin (ok for a wok, but not for a flat pan).

I notice that De Buyer now has a pan in the same shape made from thicker stock. I'll probably splurge and buy that one.

This pan is perfect for stir frying on home cooktop. It is about the same shape as a flat bottomed wok except it is made of thicker gauge steel that retains heat better. The build quality is also better than a standard wok. One thing to take note of is the handle is very long which may get in the way on a small cooktop.

Great stuff for fried rice ! I have several De buyer fry pans and have been satisfied with them. This wok also does super job for frying somerthing and big enough for cooking fried rice for 5 person. I am very happy with this pan apart from very slow shipping.
