"Love this pan. Easy to clean. Just keep it hot and add water to steam off the stuff in the pan and wipe out. The more you use it the better it gets!"

"This DeBuyer pan suits my needs perfectly. I primarily use it for omelettes, searing steak, and quick sautéing. It is lighter than a cast iron skillet, but develops a patina that keeps omelettes from sticking to the pan. This is a high quality thick pan that still retains its heat well. The rivets on the handle appear to be solid. The only downside for my purposes is that you cannot simmer high acidic foods for an extended period of time or the seasoning patina will disappear. It is very easy to reseason though. Highly recommend. "

"This is one more steel frying pan to add to my collection. I now have them in a series of sizes, and use every one. They are excellent to cook in and very durable if taken care of appropriately. I prefer De Buyer to the other brands for weight & shape."

"I love this little pan. First, the construction is very impressive. This is no wimpy little steel pan - this has mass and authority. Second, after seasoning it as directed with potato peels, this pan has been glass slick. I've cooked omelets a dozen times and there is never any sticking. Any! Highly recommended pan."

"I love it.
I'm a cast-iron aficionado from way back, but I've given up on finding newly made cast iron pans with a smooth surface (they're all "natural finish" these days). I figured carbon steel would be the next best thing.
The pan is wonderful. It seasons basically like cast iron, with similar care issues, but seasons faster. The stick release is better. The heat capacity is a bit less (to be expected), but this means the heat responsiveness is faster.
The handle is a bit wide, but that's not a dealbreaker. I expect I'll be using this for the rest of my life."

"A really fine pan in a shape and size that will fit in most any oven, including tabletop convection ovens if they are large enough. The heat conduction properties are excellent. I use this for browning fish, then take the pan and put it in the oven with the fish to finish cooking."
