Undercounter Cube Ice Machines

Full- versus half-cube ice is one of the first decisions to make when looking for an undercounter cube ice machine. Full-size cubes are approximately 7/8” on all sides, and half-size cubes are 7/8” on two sides and 3/8” on the remaining side. Since many people like to chew their ice, half-cubes are ideal for guest drinks because it is smaller and easier to chew. Smaller cubes also mean more ice can be packed in the glass, which decreases the available space for the beverage and increases profits.

When placing an undercounter cube ice machine, it is important to leave enough clearance on the sides, back and or front to allow for proper air circulation. The air has to move around the machine freely in order to keep the condenser cool. If the air vents become blocked or clogged, the production will decrease, and the machine can stop functioning or wear out faster. So, wherever there air vents, be sure to leave a couple of inches of clearance to keep the machine functioning properly.

Overall height of the machine is another important purchasing consideration. Most standard countertops are around 36” to 40” tall, but you will want to get an exact measurement and look for machines that will fit easily underneath. Many undercounter units do come on 6” legs which can be removed to gain a little extra clearance, but this is not recommended since most health departments will want to check underneath all pieces of equipment for cleanliness.
