Two compartment sinks can have up to two drain boards, deck- or wall-mounted faucet holes and various bowl sizes. These stainless steel sinks are primarily used to clean fresh produce in the food preparation area and are ideal for high-volume commercial kitchens. Two compartment sinks with two drain boards are ideal prep sinks in large kitchens where multiple employees are working on food cleaning and preparation tasks. Each employee can have their own sink bowl to wash and a drain board on which to place the container of cleaned product. Depending on the layout of your prep area, you may only need one drain board (on the left or right side) or none at all, if you have tables or counter space nearby.
Stainless steel sinks with deck-mounted faucet holes are ideally used when the waterlines come up through the floor. Wall-mounted holes are for water pipes that come through the wall or run up along it. When selecting a two compartment sink, you will want to take this and the hole spacing into consideration. The holes themselves are either spaced at four or eight inches and need to be matched with a faucet with appropriately spaced holes. Most of the time faucets are not included with compartment sinks, so be sure to get a faucet and pre-rinse unit as well.
