The three stages of manual warewashing are wash, rinse and sanitize. Health codes dictate that you have a sink with one bowl for each stage, so a minimum of three bowls are required. Drain board length and bowl size are also regulated by your local health department. The stipulations usually vary between counties, so you will want to contact your local authority to make sure the sink you choose is compliant.
As additional considerations, you will want to look at the faucet hole location and spacing. The faucet holes are either four or eight inches apart (at their centers) and can be located on either the backsplash or sink deck. Sinks with deck-mounted holes are ideal when the water lines come through the floor. Wall-mounted holes are best when the water pipes come through or run along the walls. Since faucets are not included, you will need to select one with the same hole spacing and location as the sink you choose.
